Honey Glazed Carrots

If you're lucky enough to have carrots in your garden, then this recipe is for you. It's so simple, quick, and easy that you'll find yourself making it often.

Honey Glazed Carrots pairs beautifully with roast chicken or pork, and transports well if you want to make it for a covered-dish supper. Tip: If you prefer, you can substitute brown sugar for the honey. You will need to use about 4 tablespoons each of brown sugar and butter.

Simple Instructions

  • 3 cups sliced carrots
  • 6 Tbsp. honey
  • 2 Tbsp. butter
  • 1 tsp. Dijon mustard
  • 2 Tbsp. chopped fresh parsley

Bring enough salted water (about 2 inches deep) to a boil in medium saucepan over high heat. Add the carrots and return the water to a boil. Reduce the heat to medium. Cover and cook 8 to 12 minutes, or until the carrots are crisp-tender.

Drain the carrots well; return them to the saucepan.

Stir in the honey, butter, and mustard. Cook and stir over low heat until the carrots are glazed. Sprinkle the parsley on top, and serve! (Now, sit back and enjoy the compliments.)
